This amount is for a family size salad (4 -5 people). For two people, or if you want the salad to replace your meal, you can use half the amounts described below.

STEP 1 Start by chopping some chicory straight into a big bowl. Put some salt on it and mix it gently with your hands.

STEP 2 Peel a cucmber and cut it into three pieces. Take a piece and chop it into middle size cubes - straight into the bowl. Continue by adding two choppped tomatoes - straight into the bowl.

STEP 3 Repeat the second.

STEP 4 One more time, chop the last piece of cucumber and two more tomatoes, until you can't see the bottom layer. Pour some salt over it.

STEP 5 Parsley. Chop or trim a bunch of parsley (a whole mini bag that you can find in the supermarket).

STEP 6 Optional, but gives flavour and taste is purple onion. Peel one onion and cut it in half. Slice a few circles of onion from the middle of it, and then cut them in half. SPread them over for decoration adding together a few black olives.

STEP 7 Half a cup of olive oil and balsamic vinegar an a glass. Put a teaspoon of vegetable power and mix it together. Pour over your salad.
